I run an ignitech ignition module and my speedo light on mine!

Its only early days at the moment so I haven't loaded it up with anything more than that. My main use is my ignition.

I run a small battery to act as a capacitor etc.

I'll try this regulator first, then possibly go for a the full DC conversion. I wouldn't mind to try my hand at some wiring first as I can only just get my head around this set up! :D

How much in the way of gadgets can these regulators feed?

You should be ok with most things but as already mentioned, there is very little current generated at low engine speeds. Think of the battery as like a water tank which holds a reserve for when the mains is at low/no pressure and you'll get the idea. Things like Tachos and speedos only sip from the tank but GPS and some phones (Iphone's) take more. Accessories such as air bed inflators are like running a bath

Yeah I get ya! I'll probably keep it simple and just have a cigarette lighter socket for now.

All I need to do now is to find a serveta legshield toolbox to house it all. :S

Or, what is a good toolbox to use for mounting things in? I would of thought a PX style one would be best as it has a flat top... Does any one make them pre cut for a lambretta?

I find the rally type toolboxes have more room

Plenty of space to add a cigarette lighter and other gadgets in the top?
