Info on air to water cooling converstions is real hard to find, but dont let that put you off. its all fairly simple but does take a bit of work to get it looking tidy. I`ve a bit of experience with LC conversions, built a malossi 166LC back in 1990 and currenlty nearly finished my malossi 220LC.

For water pumps VW/AUDI fitted one to the VR6 thats ideal, its a bosch with 3/4" connections, continuously rated, 12V. vauxhaul omega had the same I think. Ebay usually has quite a few for sale
To switch the pump I used an adjustable electrical thermostat made by KEMO (model M169), supplied from a company in Ripon called Brocott. It has a relay and remote temp sensor (this will need to be insulated to fit into the water system). £20 or so, Ebay again
Fit the biggest rad you can, its easier to blank bits off if it over cools compared to an overheating set up, I`m using CR250 rads
On the px the 12v DC is easy as its got it in place for the starter, but I think some lammies had batteries so I guess you could use one of those set ups. On mine when the normal ignition is switched on the thermostat is powered and it controls the temp. No need for extra switches etc.
Keep the water jacket volume reasonably small but pump water through it at a decent rate, I`m using 3/4" ID hose, cool water in at the bottom around the exhaust first.
Fit the pump at the lowest point on the system so it cant run dry or get air inside and cavitate, fit air bleeds near the barrel/head water outlet or where you can.
