Technically speaking, they should only be used on the track as the power will be massive and I'm certain no insurance company will touch you in they knew what was in a 40-60 year old scooter with 10" types and drum brakes. I'm certain no one would be contemplating riding such a machine on the road without insurance!!!!??
I think 95% of your customers will be using them on the road
So long as you are insured, legal and accept the risks.

I think we're up to 7

Hells teeth, plenty to like there and what looks like a good spread cost wise. I imagine you could choose quality bike top end and then the cases matched to your choice.

Rich, have you contemplated an "out of the box" solution... i.e. we get a complete engine at a known cost and you potentially reap more profit out of the "built" components as a package?

My small brain would seriously struggle to allow me to pay 3.5k for an engine that was designed for the track and not road use!!

What would you consider a fair price for a professionally built GT motor?

I think most of us would choke on stumping up more than a couple of grand straight out of hand - most months my scooter related disposable funds amounts to about £50 - and I don't mean what the missus thinks, I mean hard cash.

That said I have mates who happily stump that up for something they have to pedal...and even that has disk brakes front and back...

The attraction of the DIY route is that you can buy it in smaller chunks, spending what you can afford when you can afford it. It won't be plug and play and you won't get any warranty with it but the missus will think it was only £50...

Its a fair reflection of the costs involved but I'd still struggle to justify spending the money. As for the more exotic engines, you could probably more than double that. I could sell all three of my scooters and still not have enough.
Meus Lambretta est non infractus. Is est quietus.
