But all very capable.
2,000 miles shouldn't be to much of a challenge for a well put together motor what ever it is.
Picking your riding companions is more important as picking your kit.

Agree with Adam to a point, my current set up of 4 plate clutch, GT 200 kit (carry spare piston ) with evo pipe seems to be best set up in terms of grin factor, reliability and fuel consumption although a std ts1 set up is just as good

Unmolested Rapido 225, MBGM RT 70mm head, Delly 30 PHBH, JL3 pipe, GP/DL gearbox with 47/19 primaries, 4.95 final ratio, pulls like a train, sits at 65+ all day long with more to spare, nice and smooth.

N.B.: have never ridden my Lammy in Europe but there are plenty of mountains here in Oregon.

As for the fuel consumption... get a long-range tank.
