I don't know what the numbers mean so what's the differance between these two Schwalbe Weathermans...

3.50 x 10 is imperial tyre size, 100/90 x 10 is metric width and profile size (100mm wide, 4" give or take and 90% of the width given to the sidewall height) still on a 10" rim. Codes are weight and speed ratings as the graph provided points out.
watch out with the 100/90, might be wrong, but seem to remember putting one on some wide rims and it rubbed on the casing, due to the width.

No, but then 3.50 x 10 is a narrower tyre anyway so less likely to rub.
Only time I have experienced rubbing with a 3.50 x 10 tyre was with Schwalbe Racemans that were running at less than 35psi, which is probably why so many people have had issues with Schwalbes and they have since published recommended pressures that are far higher than we have traditionally used
