Do I have to use the Regulator unit that comes supplied with the Vespatronc kit - or can I use the existing 12v 3 pole Regulator that's already in place & bolted to the frame?
It's just that the one that comes as part of the Vespatronic kit looks a bit Mickey Mouse in comparison.... but I don't know if it's essential to use all of the 'supplied components' in order for the kit to work correctly
Any thoughts?

If you're not going to fit a battery, the existing 3 pole reg will be fine.
