Thick Cylinder Head Gasket
I know we are suggested to always set the squish under 1.5 bug not under 1, but why did Innocenti, SIL and Servetta use such large head gaskets that give a massive squish? Those manufacturers still made the 200's that ran well/fast etc.
Any ideas why?

Probably to do with machining tolerances. Hundreds of barrels and pistons all with slight differences in machining so bang on a thick gasket to be sure of no contact. Remember the motors weren't built for performance.
