I'm getting a 150 casing modified to take the 200 stud spacing (probably done by Oiltech).

On the new build i'm planning on using a 60mm crank with a 110 rod.

I'm inclined to get the casings built up rather than use packers.

Any thoughts as to the pro's and con's..........or other options?

I'd say packers give you more options. If you ever changed your mind about kit / stroke choice you are pretty much stuck if you get the casing built up. If you're anything like me you'll probably change your mind half way through the original build. So with that in mind I'd go with packers.
