Have seen several different manuals/books such as Haynes & Stickys, which would be the best one for a novice working on a S3 Li 125 to go for?

Sticky's second edition - for most restoration items.
If you fancy doing the engine yourself get hold of the late Steve Porter's (Sausage) video set.

the original Work Shop Manual does have its attractions from a historical perspective, although Stickies 2nd edition is definitely the way to go.
If you want to borrow an original WSM please get in touch
