I just follow the instructions on the bottle, remove valve, rotate wheel so that valve is near the bottom, squeeze in the required amount, clear out valve stem with something like a cotton bud and replace the valve. Rotate wheel a few times and re-inflate. The gloop will distribute itself all by itself when you start riding. No different to installing in a tubed wheel.

Can you squash the top of the tyre down so that it tries to suck some in when you release it?

I see what you mean, if the goop is cold it will be harder but the air pressure is sometimes a problem and you need to remove the tube from the valve and let the bottle reform back to it's shape so you can get some pressure in the bottle. Try warming the goop in a bowl of hot water first.

Anyone got any feedback from tyre fitters who replace tyres filled with punctureseal or other such product?

No but I'm surprised that people bother using it with tubeless tyres.
Did you have to do that?

you would be wasting money putting it in a tubed tyre though!
