Can you do it? Any issues to overcome?

Should be fine so long as the surface has been well keyed either with emery or an etch primer.

I have stainless parts on my scoot that were painted over 7 years ago,still good now. I used a good quality etch primer..

Same here, just keyed the area with wet and dry and a good quality etch primer and no problems since, even after six years continuous use.......
