sip road exhaust

I have recently fit a sip road exhaust on my vespa p200 have read conflicting reports about the timing some say it needs setting to 125 setting and some don't mention changing? Any advice please .

I have heard the same. Reducing the timing reduces performance and should be avoided but if the timing is too advanced for your set up, it surely will end in tears. If your engine is all fully origninal then the timing should be ok as it is but you need to know what to watch for.
Make sure you know what pinking sounds like (a sort of occassional or constant, tinging ping from the barrel and can sound like something is rattling inside). This little noise will be doing very big damage.
Once your engine is all jetted in ok. Do a final plug chop after a very long high speed run. The main jet will lean out a little as it gets properly warmed up and if it is even only sightly lean it could begin pinking at speed. Watch for silver specks on the spark plug (if there are none it is ok!).
