.....getting a carb to run with a remote filter AND getting it to start if stalled without turning off the petrol and waiting a minute to pick up the revs. Is a dyno the answer?

Could be Timbo but it depends on the tune of your engine really. Overlapping port timings can cause spit back which collects in the filter hose, some people drill a 1mm hole in the bottom of the hose to let the excess fuel drip out but that is probably going to be messy. If it's just a badly set up engine then a dyno session could do the trick.

Thanks, I'm pretty certain the ports have all been matched up and also knew about drilling the hole but when it costs £40 quid plus I'm bit reluctant to do do this. Will get it dyno'd when I get back from France..

If you drill the hole and it doesn't help.
I have a special hole undrilling solution you can use.
Its called S-uper G-lue.

Drilling a hole costs you £40??? Is it a stainless steel hole??

if the filter has an elbow tip it over past 90 degrees and let the excess fuel drip out into the element ,turn the fuel off when you pull up and leave it running a bit with a couple of blips of throttle b4 you turn ignition off
