How easy is it to change from a brass bush on the clutch to a roller bearing, is it one out and the other in? And while I'm on can this be done whilst using an LI end plate instead of a GP one as I want to install the adjustable kick start ramp.

You shouldn´t change the brass bush against the roller bearing - the surface has to be hardened to work with the rollers, the now common GP clutch baskets aren´t. It will sure fail if you put a roller bearing in..... and nobody want´s to have a deadlock / failure in the clutch.
