I have a 140 on the rear of my GTS and Im told that it adds a couple of MPH to the top speed. However, I'm given to believe that the GTS300 has less torque available at high revs and won't pull the bigger tyre. Try the GTS Forum, there's plenty of posts on the issue http://www.gtsownersclub.co.uk/

Think it really boils down to weight.
One of my clubmates runs this set up as she is light and can hit the rev limiter fairly easily. The bigger tyre stops this and allows a higher top speed.
The benifit would i'm sure be negated by habitual pie eaters or regularly traveling two up with the Mrs(who may or may not also have a fondness for pies)

I put a 140 Diabolo on mine and found it a lot more forgiving in the wet and hangs on a lot longer in a tightening bend.
