Clearly it is only effecting the throttle pick up off of idle by your description .
The idle is presumably stable so rather than the Pilot jet or air jet it could be the slide...... the slide is responsible for pick up off idle to approx 1/8th of throttle range.

Try this simple experiment. next time you go to pull away apply a little choke and see if that improves initial pick up. if it does pick up better then it would suggest you need to change your slide to a richer one .
from MB Scooter site 'Dellorto slides 26 - 30mm PHBH 30 35 40 45 50 55 Alloy
Have tried a 40, 45 and a 50 slide and have tried with choke :|

crikey don't ya just hate intermittent sparking issues .
Its probably worth going over all your ignition system connections and earthing points and give them a clean . Its starting to get damp in the mornings and that can sometimes uncover lots of poor electrical connections

All sorted now - combination of a couple of things I think. Replaced stator so now getting a good consistent spark, timing reset at 18 degrees, also changed slide to a 35. Scooter is starting well again, first or second kick and pulls away nicely, not perfect, but much much better than it was. Now I have an oil leak - haha - always something!!!!

If I were you I'd go back to using a 40 slide in the carb.

Where is “oil” leak from?

You may be richening up your air mix, by going to that size of slide, to mask an air leak.

Because you changed 2 things, now you dont know if the new stator plate cured the problem or changing the slide cured it.

Ah, good point! I'll pop the 40 in tomorrow and see how it goes :D

Oil is definitley coming from side casing - however, I intend to do a leak test over the weekend ;)
