A couple of opinions:
The master cylinder looks really nasty. Cheap cheap. And it's got a rubber hose, so budget a few more bucks for a decent one if you get one.

How did you go with the SIP rims, mine arrived and the bolt is too short on the PM disc.
I'm assuming that the slightly longer bolts that came inside the rims box will sort these out, although to be honest I could not get the bloody alan keyed bolts out of the disc! I'll try again on the weekend, just didn't want to stuff the brake up by breaking a bolt on the way out, any suggestions for getting those out without braking it?
The studs that come with the SIP rims will be no use with the PM tuning disc, that has normal button headed bolts, so studs have the wrong thread and the bolts tighten clockwise unlike wheel studs which tighten anti clockwise so that when you tighten the nut the stud doesn't unwind. You'll need to get longer bolts and they'll need to be exactly the correct length to work with the dome nuts that SIP wheels use. Contact Frank Sanderson on here, he may be able to supply or tell you what bolt you need.

As for getting your Allen headed studs out, double nut the thread and turn to break the seal rather than chew the key hole up.Once free remove nuts then unscrew as normal.

I'll have to email LTH and see what they say. I emailed PM about their disc kits two or three days ago and they haven't replied yet!
Funny, you wrote this 2 days before I was at LTH and Marco showed me this disc brake set up. It's a nice high quality product, not as expensive as some and looks like it would work nicely. We are fortunate to have options between many good makers out there.

@wack63 - I ended up using my Stud Remover on these & it worked a treat, had to clean up the threads after though as it was a bit rough on one of the them, so cleaned them all up.
@corrado - Now I'll onto Frank to find out about the new bolts.
Thanks All.
