What are the different versions and what are the differences between them? I've only ever seen the 7000 for sale.

there are 6000, 7000,80000
versions.
Basically depending upon state of tune / max revs.
6000 - standard engines
7000 - kitted engines - low level of tune
8000 - tuned engines higher revving

I went with the 8000 as mine is an RB this was recommended to me.

Got one on my RB, an 8000 model. Ive done about 700 miles with it now. I ran my engine in without it and had it fitted after. The noticable difference is that you can just dial the power in and the whole engine feels smoother, if that makes sense! For the gains you get its a cheap piece of kit IMO.

I've got a 7000 for my TS1 but yet to fit it, I'll let you know what difference it makes once it's on.

6000 one for me for me - Stage 4 ( SIL), Yam 110 rod, lighter piston, Mikuni 24mm, Af Clubman and Li 125 gearbox 18X47. Nearly went for the 7000 but was recommended the 6000. The science looks good and it will hopefully make a smooth, economic and reasonable quick engine.
