Traditionally lapping involves a thick sheet of glass with a sheet of wet & dry paper on top (mum's coffee table when she was out) and twist the head on the paper until it's a uniform grey colour. Doesn't take long, and I usually do it every time I replace the head to make sure it's not warped at all.
To do it to the barrel means the engine has to be dropped.

You want the sanding surface to be perfectly flat. A simple solution is a piece of window glass or go to a local charity shop and buy a mirror. You can get spray adhesive at a hardware or craft store to attach the sand paper to the glass. . Use 320 grit sand paper or finer. Use irregular motion or a figure 8. Periodically check. Stop when you see the surface a common colour.

If you remove the rear shock and the rubber bump stop the barrel should come off the studs ok with out dropping the engine.

Does the head gasket need to be coated both sides if using a sealer such like wellseal ?

if your using a gasket you shouldn't need any sealant. If your not using a gasket put a smear on both surfaces and wait a minute or so for it to go tacky then slap um together..
I'd aim to not use a gasket if clearance allows it as your gasket will always be the weak link.
