Which I suppose is OK but given that Head temp does not give much guide to tuning, but will warn of the engine being "too hot". Then the point of a temp guage would be to alert the rider to something out of the ordinary which is of no use if one doesn't know what normal or ordinary actually is.

I take your point, but with there being such a large variation of temperatures displayed depending on where the sensor is mounted, type of kit, state of tune etc (not to mention the possibility of an Avanti head

) can there ever be any other reading than "normal" or otherwise for any particular setup?

I was thinking Avanti head for my build, because of high ambient temp. and long 3 min traffic lights. But also advised to use long finned flywheel (Indian) and cowling with large opening (unsure off what)

If you go for the Avanti head you can only use the Avanti head cowling. As to the longer finned Indian flywheel, there seems to be some debate as to whether this has any cooling benefits. Of more importance is to ensure there is a minimum gap between the fins and the flywheel cowling. I originally had an Indian long fin flywheel but machined it down to "standard" height to fit with a standard cowling and noticed no differance to CHT (and that's in Western Australia, so lots of nice hot days like you
