I paid well over a grand to have my engine tuned and built by a well know tuner in. Once I fitted the engine into my bike I drove 3 hours to his place to have it set up on his dyno. He wouldn't even let me in his workshop whilst he dyno'd it for "health and safety" reasons. When I got it home it ran like a bag of nails. Total waste of my time and money. So it's a very good question who do you trust to dyno a scooter engine?

I encountered the "not being present during the Dyno run" with JB. He said it was because of his insurance which I think is fair do's - I buy insurance for a living so I can understand this being a condition. I'd ridden an hour and a quarter so having to sit outside wasn't much fun but I did watch the final run. I think if witnessing the event is a big deal for you then ask about that when you book. To be frank even listening to your bikes seemingly being thrashed within an inch of its life isn't much fun! Ultimately if what you want is your bike set up right, then it really doesn't matter.

This was my only encounter with JB so far and I was impressed. He seems like a good bloke, identified my blown exhaust gasket before the run and changed it and generally knows what he's talking about.
