This may help, or at least it gives you a picture you don't often see. It'sthe data we downloaded from our RB250 sprinter that plots RPM (top ) EGT & CHT as you can see from left to right the EGT stays at a steady 300 with a slight rise in CHT until the sprint starts then you can see 1st,2nd,3rd & 4th gear the temp rises sharp to 600 but the tails back down to 400 ish for the run down. The data will be different from yours as we are using very high comp head 13:1 and Avgas .

Different makes and Types of Probes react faster or slower... Also the positioning effects the readings (if you have already fitted the probe try different depths).The digital EGT"s are far superior to the needle (analouge type).
Some even have contacts to bring in an alarm or solenoid ... (powerjet)...
Around town I get readings of 400-500.
The highest readings around 600 (But I could do with going up a size on the MJ).
Surprisingly enough the highest readings are at 3/4 throttle (Cruising Speed ~ Its a TMX35) But a blip up or throttle back drops the readings.
The EGT I have on will show the temperature inside the exhaust even if the bike is cold

Hmm, the instructions that came with my egt suggested
not to heat up the thermocouple up with an external heat source.
Why not? tried it with mine, still works ok

Recommended test for the calibration of a thermocouple (Most EGT"S use the "K TYPE")
Ice cubes in a jug with a little water ~ reading should be 0 Degrees Celcius ~
There are some EGT"s gauges though that don"t read this low

(Most digital do)
The Carlsberg of the EGT"s is the American Auber ~ It can use any type of probe - & is probaly the most accurate gauge on the market
