Check your earths. There should be an earth from the bulb case to the frame somehow. Often it's a wire from the bulb holder to one of the screws that hold the control rods. I can't imagine there's a problem between the stainless steel and the fuel - stainless steel tanks have been used on boats for decades.

But polished ones that haven't been cleaned properly of polishing powder? I can see that being a problem.

Keep it well lubricated. If the plastic outer casing cracks, water will get in (if you ride in the wet) and it'll corrode pretty quick.

Oil or grease? I don't know. Oil is usually best for cables, but a good synthetic grease may help it corroding, but it may also add a bit too much drag

I went down this path, even to the point of getting a TV175 barrel. The TV175 barrel is the best option as the transfer ports are bigger than most barrels and it needs less topping and tailing. Either buy cheap ones and keep them well lubricated with light oil such as 3 in 1, or buy the lined ones. Where can I find a Lambretta frame? I'm looking for a cut or hoopless frame. A V5 would be nice as would some forks. Can anyone recommend someone?

Check the alignment of the pick up coil to the flywheel tangs. If they are out of alignment it won't rev higher than about 6000 rpm.
