If it is slow to return to tickover that is usually a weak mixture leading to heat build up, could be an air leak somewhere - have you leak tested the top end? - or it could be jetting! Best to go up with jetting until it gets boggy then come back down to be safe

Re: Sip tubeless tyre pressures?
I tend to run 20 - 24 psi front & 30 - 36 psi rear on my SIP rims. (Sava front, Conti rear at present) If you're using the nuts that came with the rims then the easiest thing to do is carry a set of M8 nylocs for use with the spare. I wouldn't want to be messing about changing studs at the side ...

Re: Exhaust gasket sealer?
I always use basic clear silicon for cylinder head (no gasket), base ally packer (no gasket) and exhaust flange. Also used for exhaust slip joints, not had a problem with it

Re: 240 gearing
I was running 17/46 on my 240 Monza (30 TMX, JL3) but thought the same as you as it seemed to be revving out at the top end, I have recently gone to 18/46, the bike still pulls really well but now seems to hit a wall at about 70 (approx 10mph slower). I think this is more to do with the pipe charact...
